Бобовые считаются замечательным пищевым источником биологически ценных компонентов, которые могут положительно влиять на многие физиологические и метаболические процессы. Люпиновая мука содержит ценный белок, каротиноиды, витамин Е, макрои микроэлементы, богата магнием, калием, железом. Отличительной чертой муки люпина является полное отсутствие в ее составе глиадина и глютена, что особенно важно для людей с нарушениями процесса пищеварения.</p></sec><sec><title>Методы</title><p>Методы. Изучены материалы научных исследований в области производства люпина, биохимического состава его семян, целесообразности применения продуктов переработки люпина в производстве продуктов питания из растительного сырья.</p></sec><sec><title>Результаты</title><p>Результаты. Бобовые играют важную роль в питании человека и являются частью традиционного рациона многих регионов по всему миру. Бобовые, в том числе и белый люпин, содержат значительное количество белка, клетчатки, микроэлементов и многих ценных фитохимикатов. В составе ежедневного рациона могут оказывать благотворное физиологическое действие и, таким образом, помочь в контроле и профилактике заболеваний цивилизации, таких как сахарный диабет, ишемическая болезнь сердца, атеросклероз. Давней проблемой, связанной с бобовыми, является довольно высокое содержание антипитательных факторов, которые могут ограничить их биологическую ценность. Согласно текущим исследованиям, эти соединения могут быть легко удалены или уменьшены при изменении условий обработки. Некоторые из этих веществ могут также оказывать положительное влияние на здоровье человека. Люпиновая мука, белковые концентраты являются прекрасными функциональными ингредиентами и могут быть использованы для производства продуктов лечебно-профилактического и диетического назначения.</p></sec></abstract><trans-abstract xml:lang="en"><sec><title>Relevance</title><p>Relevance. Legumes are considered a wonderful food source of biologically valuable components that can positively affect many physiological and metabolic processes. Lupine flour contains valuable protein, carotenoids, vitamin E, macroand microelements, is rich in magnesium, potassium, iron. A distinctive feature of lupin flour is the complete absence of gliadin and gluten in its composition, which is especially important for people with digestive disorders, white lupin seed processing products can serve as excellent components to increase the nutritional value of food, primarily such as bakery and flour confectionery.</p></sec><sec><title>Methods</title><p>Methods. The materials of scientific research in the field of lupin production, the biochemical composition of its seeds, the feasibility of using lupin processing products in the production of food from plant raw materials have been studied.</p></sec><sec><title>Results</title><p>Results. Legumes play an important role in human nutrition and are part of the traditional diet of many regions around the world. Legumes, including white lupin, contain a significant amount of protein, fiber, trace elements and many valuable phytochemicals. As part of the daily diet, they can have a beneficial physiological effect and, thus, can help in the control and prevention of diseases of civilization, such as diabetes mellitus, coronary heart disease, atherosclerosis. A long-standing problem associated with legumes is a rather high content of anti-nutritional factors that can limit their biological value.
