Гречиха является источником многих биологически активных веществ. Особенно много их в листьях и соцветиях, из которых можно получать чайные напитки специализированной и функциональной направленности. Эти части растений богаты полифенольными соединениями (ПФ), основной из которых — рутин. Содержание их в растении зависит от многих факторов.</p><p>Цель работы — установление влияния сроков посева, ультрафиолетового (УФ) излучения и температуры на накопление ПФ в гречихе.</p></sec><sec><title>Методы</title><p>Методы. Семена гречихи высевали четырежды в июне — июле. Для определения содержания ПФ в водно-этанольных экстрактах и водных настоях травы гречихи разных сроков посева, собранной в фазу активного цветения, использовали реактив Folin-Ciocalteu, антиоксидантной активности — DPPH-радикал.</p></sec><sec><title>Результаты</title><p>Результаты. Сроки посева оказывают влияние на содержание ПФ. При более ранних срока высева семян накопление ПФ в экстрактах было выше (8,42–9,33%) по сравнению с поздним (6,10%), в настоях варьировало от 2,10 до 2,83%. Имеются указания на прямую зависимость накопления ПФ в экстрактах от уровня УФ-излучения в период вегетации, требующие дальнейшей проверки. Существенного влияния температуры не выявлено. АОА всех образцов была высокой. Содержание ПФ в водных настоях позволяет рекомендовать траву гречихи в качестве сырья для получения чайных напитков.</p></sec></abstract><trans-abstract xml:lang="en"><sec><title>Relevance</title><p>Relevance. Buckwheat is a source of many biologically active substances. Especially there are a lot of them in leaves and inflorescences from which it is possible to get tea beverages for specialized and functional nutrition. These plant parts are rich in polyphenolic compounds (PC), the main one being rutin. Their content in the plant depends on many factors.</p><p>The aim of this study is to estimate the effect of sowing dates, ultraviolet (UV) radiation and temperature on PC accumulation in buckwheat plants.</p></sec><sec><title>Methods</title><p>Methods. Buckwheat seeds were sown four times in June-July. The PC content of buckwheat water-ethanol extracts and water infusions was determined by Folin-Ciocalteu, method antioxidant activity — by DPPH radical scavenging method.</p></sec><sec><title>Results</title><p>Results. The sowing dates influence the PC content. At the earlier sowing dates of seeds the accumulation of PC in the extracts was higher (8.42–9.33%) in comparison with the later ones (6.10%). The PC content in the infusions varied from 2.10 to 2.83%. There are indications of a direct relationship between the accumulation of PC and the level of UV radiation during the growing season requiring further verification. A significant effect of temperature was not revealed. The AOA of all samples was high.
